We're off work most of this week. This morning I decided to make a lovely frittata. It's easy to make, affordable, and tasty.
I used a recipe I found online but modified it a good deal and threw in some leftover spinach. I think it's a good way to use up leftover veggies and meat and still knock your family's socks off.
I was so excited to eat it that I forgot to take a picture when it came out of the oven. Just imagine it a lovely shade and crispy on the edges.
